Peanut Butter Black Bean Brownies (Vegan & Gluten-Free)
Ingredients
- 1 15-oz. can black beans , rinsed and drained
- 2½ T ground flaxseed
- 6 T water
- 3 T melted coconut oil
- ¾ C cocoa powder
- ¼ t salt
- 1 t vanilla
- ½ C evaporated cane sugar
- 1½ t baking powder
- 2 T Enjoy Life mini chocolate chips
- ¼ C peanut butter
- ¼ C maple syrup
- ¼ C So Delicious coconut creamer
Instructions
- Preheat oven to 350°F.
- Lightly grease a 12-cup muffin pan.
- Combine ground flax and water in food processor. Pulse a few times, then let sit for a few minutes.
- Add remaining ingredients (except chocolate chips, peanut butter, maple syrup, and creamer). Pulse until you can let it run. Let it run for 2-3 minutes. You want it smooth.
- Evenly distribute the batter in the muffin cups.
- Melt together the peanut butter, maple syrup, and coconut milk creamer until smooth and dreamy. Drop a spoonful into each brownie and swirl in.
- Sprinkle with a few Enjoy Life mini chocolate chips.
- Bake for 22 minutes or so until the tops look dry and the edges pull away from the side of the pan.
- Remove from oven and let cool for 20-30 minutes on a rack. After cooling, remove from pan gently. They are tender and fudgy!
