Veggie Loaf with Kale

Ingredients

  • ½ C cooked brown rice
  • ½ C cooked lentils
  • 2 C low fat sheddar cheese
  • 1 C wheat germ or oatmeal
  • 1 C sunflower seeds
  • 1 onion , chopped fine
  • ½ green pepper , chopped fine
  • ½ C shredded carrot
  • 4 eggs , beaten
  • 2 T soy sauce
  • 1 T dry mustard
  • ½ t thyme
  • ½ t marjoram
  • ½ t sage
  • catsup

Instructions

  1. Combine all ingredients and form into log. Line baking pan with parchment paper, place veggie loaf on parchment lined pan. Bake in 350°F oven for 40 minutes.
  2. Top veggie loaf with catsup then return to oven and bake for an addi- tional 15 min- utes or until lightly browned.
  3. Hint: Chop large amount of kale in food processor. Store in tightly sealed plastic bag. Kale is then instantly ready for a veggie loaf, smoothie, salad, or to put in scrambled eggs.
