Veggie Loaf with Kale
Ingredients
- ½ C cooked brown rice
- ½ C cooked lentils
- 2 C low fat sheddar cheese
- 1 C wheat germ or oatmeal
- 1 C sunflower seeds
- 1 onion , chopped fine
- ½ green pepper , chopped fine
- ½ C shredded carrot
- 4 eggs , beaten
- 2 T soy sauce
- 1 T dry mustard
- ½ t thyme
- ½ t marjoram
- ½ t sage
- catsup
Instructions
- Combine all ingredients and form into log. Line baking pan with parchment paper, place veggie loaf on parchment lined pan. Bake in 350°F oven for 40 minutes.
- Top veggie loaf with catsup then return to oven and bake for an addi- tional 15 min- utes or until lightly browned.
- Hint: Chop large amount of kale in food processor. Store in tightly sealed plastic bag. Kale is then instantly ready for a veggie loaf, smoothie, salad, or to put in scrambled eggs.
