Squash Cornbread



  • 1 C mashed cooked winter squash
  • ¾ C cornmeal
  • 1 egg
  • ½ t salt
  • 2 t baking powder
  • 2 T melted butter or margarine


  1. Preheat oven to 350°F.
  2. Melt butter in an 8-inch cast iron skillet or similar pan. Beat squash and egg together. Add remaining ingredients, including melted butter. Add a bit of milk or water if it seems very dry, but mixture should be fairly stiff. Spread in greased skillet and bake 40 minutes.
