Squash Cornbread
Ingredients
- 1 C mashed cooked winter squash
- ¾ C cornmeal
- 1 egg
- ½ t salt
- 2 t baking powder
- 2 T melted butter or margarine
Instructions
- Preheat oven to 350°F.
- Melt butter in an 8-inch cast iron skillet or similar pan. Beat squash and egg together. Add remaining ingredients, including melted butter. Add a bit of milk or water if it seems very dry, but mixture should be fairly stiff. Spread in greased skillet and bake 40 minutes.
