Seasoned Chicken with Avocado Mango Salsa
Ingredients
- 4-6 chicken breasts , each cut into 2-3 pieces and flattened
- 2 C flour
- ½ t salt
- 2 t chili powder
- 2 t chipotle
- 1 t coriander
- 1 t granulated garlic
- olive oil
- juice from 1 lime
Instructions
- Combine flour and all of the seasonings. Drizzle oil in the bottom of a sauté pan. Dredge chicken in the seasoned flour and place in the pan. Cook 3-4 minutes on each side and remove from pan when done.
- Continue until all pieces are cooked. Return all pieces to the pan and sprinkle the lime juice over the chicken. Remove chicken to the serving dish and top with some Avocado Mango Salsa, reserving most of it to be served on the side.
