Chicken Mole
Ingredients
- 3 T sunflower oil
- 3 t garlic powder
- 4 T chili powder
- 1 15-oz. can tomato sauce
- 2 T fresh ground peanut butter
- 2 iz Ghiradelli 100% cacao unsweetened chocolate
- 4 lb free-range whole chicken
- 1 qt chicken broth
- ½ t sea salt
- ½ t ground black pepper
- 1 small head green cabbage
Instructions
- Heat the oil over medium heat in a large kettle. Sauté the chili powder and garlic powder to light brown. Add the peanut butter and chocolate, stirring while the chocolate melts. Add the tomato sauce and chicken broth, combining thoroughly.
- Add the whole chicken, increase heat to slow boil. Cook chicken thoroughly, approximately 1½ hours. Remove the chicken and debone. Add the cooked chicken meat, sea salt, and ground black pepper to the broth, lower the heat and simmer 30 minutes.
- Serve topped with chopped green cabbage.
