Cafe Latte Buttermilk Scones
Ingredients
- 8 C unbleached white flour
- 4 T sugar
- 3 T baking powder
- 2 t salt
- 2 t baking soda
- 3 C buttermilk
- 1-1/3 C chilled butter
Instructions
- Preheat oven to 400°F.
- Stir together dry ingredients and cut in chilled butter with a pastry knife until butter is pea sized (or you can grate the butter into the dry ingredients).
- Make a well in the center and add buttermilk and any fruit or nuts (if using). Stir quickly and lightly- do not over-mix! When dough holds together, knead lightly in the bowl 4-5 times- don't over-knead! Dough should be fairly dry and loose, but holding together.
- Place dough onto floured counter or cutting board. Cut in half (if making 16 scones) and shape each half into a round, flat disc. Cut each disc into 8 wedges (like pie pieces) and place on a lightly greased cookie sheet. Bake for 12-20 minutes at 400°F.
