Boiled Cider
Boiled cider could also be called Apple Molasses or Apple syrup. It is a thick, delicious, and tangy syrup similar to maple syrup, but made with apple cider. Enjoy this treat warm and served or ice cream, or incorporate boiled cider into a Caramel Apple Cheesecake! Makes a wonderful gift!
Ingredients
- ½ gallon apple cider
Instructions
- In a large pot with a heavy bottom, bring apple cider to a boil. Once it reaches a boil, turn the cider down to a simmer and let reduce until it reaches a consistency you like, somewhere between maple syrup and a thin caramel sauce. Stir occasionally, but more often as the cider reduces to a syrup-consistency. This may take anywhere from 2-5 hours
- Take care not to scorch the cider or reduce it too much. Once the boiled cider cools, it will set up more, becoming thicker than when it was warm. Store the finished boiled cider in the fridge.
