Best Rhubarb Pie Ever

Ingredients

  • 1 double pie crust
  • 2 medium to large eggs
  • 1 C sugar
  • 2 T flour
  • 3 C rhubarb , cut into ½" pieces
  • 1 t grated or minced orange rind
  • 1 T orange juice
  • 1 T butter
  • EGG WASH: made by beating 1 egg with 1 T water (optional)
  • sugar for sprinkling on egg-washed crust (optional)

Instructions

  1. Preheat oven to 450°F.
  2. Beat the two eggs very slightly. Beat the sugar and flour into the eggs and add the orange rind and juice. Combine with the rhubarb and put in your unbaked bottom pie shell. Dot with butter.
  3. Cover the top crust (latticed if you're feeling fancy- I never am). For an arguably prettier pie, brush with egg wash and sprinkle with sugar.
  4. Put the pie in the preheated oven, turn the temp down to 350°F and bake 35-40 minutes.
  5. Strawberry-Rhubarb Variation: Substitute 1-½ C sliced fresh strawberries for 1½ C of the rhubarb. Reduce sugar to ¾ C and use lemon rind and juice in place of orange rind and juice.
