Autumn Quinoa and Butter Beans
Ingredients
- ½ C quinoa
- 2 T butter
- ¾ C onion , finely chopped
- 1 T ginger , fresh minced
- ¾ C orange juice
- 2/3 C water
- 2 T honey
- 1 t salt
- ¼ t coriander
- 1/3 t cardamom , ground
- 1/8 t nutmeg , ground
- 1 C sweet potato , diced
- 1 C butternut squash , diced
- 1½ C canned butter beans , drained and rinsed
- ¼ C cranberries , chopped
Instructions
- Rinse and drain quinoa. Melt butter in a saucepan, add onion and ginger and cook until onion is softened. Stir in the orange juice, water, honey, salt, coriander, cardamom, and nutmeg and bring to a boil. Stir in sweet potatoes and squash and return to a boil.
- Cook uncovered to a slow boil for 7 minutes and then stir in butter beans and quinoa. Return to boil, reduce heat and simmer, covered, for 15 minutes. Stir in cranberries. Simmer, covered, 5 minutes longer.
