Herbed Rice

Ingredients

  • 1 C of your favorite rice (basmati works great)
  • 1 carrot , peeled and diced
  • 1 rib celery , diced
  • 1 small bell pepper , diced
  • ¼ small red onion , diced
  • DRESSING:
  • T fresh minced parsley
  • T fresh chopped dill
  • T fresh chopped basil
  • ½ t fresh minced garlic
  • 1 T dijon
  • 1 T red wine vinegar or balsamic vinegar
  • T olive oil
  • ¼ t sea salt
  • 1/8 t black pepper

Instructions

  1. Cook your rice according to directions. Add the diced car- rot in the last 2 to 3 minutes of cooking time. Remove from heat and cool.
  2. Mix dressing ingredients together.
