Herbed Rice
Ingredients
- 1 C of your favorite rice (basmati works great)
- 1 carrot , peeled and diced
- 1 rib celery , diced
- 1 small bell pepper , diced
- ¼ small red onion , diced
- DRESSING:
- 1½ T fresh minced parsley
- 1½ T fresh chopped dill
- 1½ T fresh chopped basil
- ½ t fresh minced garlic
- 1 T dijon
- 1 T red wine vinegar or balsamic vinegar
- 2½ T olive oil
- ¼ t sea salt
- 1/8 t black pepper
Instructions
- Cook your rice according to directions. Add the diced car- rot in the last 2 to 3 minutes of cooking time. Remove from heat and cool.
- Mix dressing ingredients together.
