Stomp Pot (Netherlands)
Ingredients
- potatoes
- kale or endive
- ½-1 lb smoked kielbasa , or 1-2 C seasoned, baked tofu
- chopped cabbage
- chopped onion
- garlic
- butter, margarine, or olive oil
Instructions
- Boil potatoes like you are making mashed potatoes. You can cook the greens separately, or use a steamer over the potatoes and place a large bunch of kale, chopped cabbage, chopped onions, and/or garlic to taste. Drain water when fork tender (usually about 25 min.)
- Add 1/4 cup or more butter, margarine or olive oil. “Stomp” the potatoes with the cooked greens until well blended and mashed. Continue to mash.
- Warm/brown Smoked Kielbasa or smoked tofu that is cut into bite-sized pieces. Blend all together. Enjoy.
