Lemon Braised Kale
Ingredients
- 2 bunches kale or 2-10oz bags fresh spinach
- 2 T olive oil
- 1 large red onion , chopped
- 2 or 3 cloves garlic , minced
- juice of 2 large lemons
- ½ t salt
- ½ t freshly ground black pepper
Instructions
- Rinse the kale or spinach in a colander under cold running water. Cut off the stems and coarsely chop the leaves. Set aside.
- In a large saucepan, heat the oil over medium high heat. Add the onion and garlic and cook, stir- ring, for 3 or 4 min- utes. Add the kale or spinach, lemon juice, salt and pep- per and cook over medium-low heat until the greens are wilted, about 4 to 6 minutes.
- Transfer to a serving platter and keep warm until ready to serve.
