Coconut Bread

Ingredients

  • 3 C all-purpose flour
  • 1 egg , well beaten
  • 1 T baking powder
  • 1 t vanilla
  • 1 C evaporated milk
  • 1 t salt
  • 2 C finely grated coconut
  • 4 oz unsalted butter , melted and cooled

Instructions

  1. Sift the flour, baking powder, and salt together. Mix in the sugar and coconut. Add the egg, milk, vanilla, and butter, mixing lightly but thoroughly.
  2. Divide the mixture between 2 greased 9-by-5- loaf pans. Fill each about 2/3 full. Sprinkle with sugar and bake in a 350- degree oven for about 55 minutes, or until a caketester comes out clean.
  3. Let loaves cool partially in pans. Then turn out on cake rack.
