Open Daily 7am to 9pm
- 3 C all-purpose flour
- 1 egg , well beaten
- 1 T baking powder
- 1 t vanilla
- 1 C evaporated milk
- 1 t salt
- 2 C finely grated coconut
- 4 oz unsalted butter , melted and cooled
- Sift the flour, baking powder, and salt
together. Mix in the sugar and coconut.
Add the egg, milk, vanilla, and butter,
mixing lightly but thoroughly.
the mixture between 2 greased 9-by-5-
loaf pans. Fill each about 2/3 full.
Sprinkle with sugar and bake in a 350-
degree oven for about 55 minutes, or
until a caketester comes
loaves cool partially in pans.
Then turn out
on cake rack.
