Peanut Butter Black Bean Brownies (Vegan & Gluten-Free)

Ingredients

  • 1 15-oz. can black beans , rinsed and drained
  • T ground flaxseed
  • 6 T water
  • 3 T melted coconut oil
  • ¾ C cocoa powder
  • ¼ t salt
  • 1 t vanilla
  • ½ C evaporated cane sugar
  • t baking powder
  • 2 T Enjoy Life mini chocolate chips
  • ¼ C peanut butter
  • ¼ C maple syrup
  • ¼ C So Delicious coconut creamer

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease a 12-cup muffin pan.
  3. Combine ground flax and water in food processor. Pulse a few times, then let sit for a few minutes.
  4. Add remaining ingredients (except chocolate chips, peanut butter, maple syrup, and creamer). Pulse until you can let it run. Let it run for 2-3 minutes. You want it smooth.
  5. Evenly distribute the batter in the muffin cups.
  6. Melt together the peanut butter, maple syrup, and coconut milk creamer until smooth and dreamy. Drop a spoonful into each brownie and swirl in.
  7. Sprinkle with a few Enjoy Life mini chocolate chips.
  8. Bake for 22 minutes or so until the tops look dry and the edges pull away from the side of the pan.
  9. Remove from oven and let cool for 20-30 minutes on a rack. After cooling, remove from pan gently. They are tender and fudgy!
