Mincemeat Bars

Christmas wasn’t Christmas in my family if we didn’t have mincemeat bars as a holiday treat. I have taken on the tradition and make it for the family and send it in the mail to those not able to make it home for the holidays.

Ingredients

  • 5 C rolled oats
  • C flour
  • 1 t baking soda
  • 2 C packed brown sugar
  • 2 C shortening
  • 3-4 C moist mincemeat (24-32 oz jar moist or 2-9oz boxes dried condensed)

Instructions

  1. Put rolled oats through food processor to coarsely chop oats and measure 5 cups. Add flour, soda, and sugar, and mix thoroughly. Cut in shortening until mixture is crumbly. Divide into 2 parts.
  2. Pack ½ firmly in bottom of 9x13 pan. I use a flat spatula to press the mixture firmly. Spread mincemeat evenly on top, then add remaining oat mixture and pack firmly. The more firmly it is packed the less crumbly it will be. Bake in oven at 350°F for 40 minutes. Cool and cut into squares.
