Begin by bringing the lemon juice, water, salt and pepper to a boil. Pour it over the couscous and cover, Let it stand for about 10 minutes and then add the fresh dill and fluff with a fork. Cover it again until you are ready to serve it.
Cut chicken breast into slices and sauté in olive oil, sprinkle on a little salt and fresh cracked pepper. Add all the veggies, except the tomato and sauté until they are cooked al dente. Add the tomatoes at the end so they heat through, but still retain their shape. Serve over lemon dill couscous
