Fruit Coucous with Honey Cinnamon Yogurt
This recipe puts a new spin on couscous, and it is incredibly simple to make. It’s also very healthy. Although everything in this class [Mediterranean Diet] was tasty, this was definitely the dish that everyone raved about. It has become a Marketing Department favorite, and was also taught at the St. Luke’s Women’s Breast Cancer Expo.
Ingredients
- 1 C fresh unsweetend orange juice
- ¼ C water
- 1 T sugar
- 1 C whole wheat couscous
- 2 C fresh strawberries , sliced
- 2 C seedless grapes
- 2 T honey
- 8 T yogurt , thick natural-set like Fage, any fat content
- ½ t cinnamon , ground
Instructions
- Heat the orange juice, water and sugar in a saucepan over a high heat until it comes to a boil. Place the couscous in a heatproof bowl, the boiling liquid over the couscous, and cover with a plate or clean dishcloth to trap the steam.
- After 5 minutes, fluff up the couscous with a fork, then stir in the grapes and sliced strawberries. Cover and cool in the fridge.
- While the fruit couscous is cooling, mix together the yogurt, liquid honey and cinnamon in a bowl. Serve the fruit couscous with the honey-cinnamon yogurt drizzled on top (you can also add a light dusting of cinnamon if you like).
