Best Vegan Carrot Cake

Ingredients

  • ¼ cinnamon applesauce
  • 1 vanilla extract
  • ½ vegan margarine , softened
  • 1 salt
  • baking powder
  • 2 cinnamon
  • 1 sugar
  • flour
  • ¼ soy milk
  • 1 grated carrot (plus some for a topping if you would like)
  • 1 walnuts , chopped
  • ½ vegan margarine
  • 2 powdered sugar
  • ½ soy milk
  • 1 vanilla extract

Instructions

  1. Pre-heat oven to 325°F degrees. Grease and flour a 9-inch square baking pan.
  2. Combine applesauce, vanilla, margarine, salt, baking powder, cinnamon, sugar, flour and soy milk until well mixed. Add carrots and walnuts. Spread batter evenly in baking pan. Bake for 45 minutes.
  3. To make icing, pulse margarine in food processor scraping down the sides as needed. Add the soy milk and vanilla extract and pulse a few more times.
  4. Add the powdered sugar ½ cup at a time and blend until smooth and fluffy. Ice cake once cooled and sprinkle with shredded carrot if desired.
