Best Vegan Carrot Cake
Ingredients
- ¼ cinnamon applesauce
- 1 vanilla extract
- ½ vegan margarine , softened
- 1 salt
- 1½ baking powder
- 2 cinnamon
- 1 sugar
- 1¼ flour
- ¼ soy milk
- 1 grated carrot (plus some for a topping if you would like)
- 1 walnuts , chopped
- ½ vegan margarine
- 2 powdered sugar
- ½ soy milk
- 1 vanilla extract
Instructions
- Pre-heat oven to 325°F degrees. Grease and flour a 9-inch square baking pan.
- Combine applesauce, vanilla, margarine, salt, baking powder, cinnamon, sugar, flour and soy milk until well mixed. Add carrots and walnuts. Spread batter evenly in baking pan. Bake for 45 minutes.
- To make icing, pulse margarine in food processor scraping down the sides as needed. Add the soy milk and vanilla extract and pulse a few more times.
- Add the powdered sugar ½ cup at a time and blend until smooth and fluffy. Ice cake once cooled and sprinkle with shredded carrot if desired.
