In a large skillet over medium heat, sauté the garlic and mushrooms in the olive oil & butter until softened. Add chipotle spice & maple syrup. Allow to cool well and drain off any excess liquid. Transfer to a bowl, then add the remaining ingredients. Mix well.
Place a small spoonful in the middle of each wonton wrap. Wet the edges of the wrap, fold into a triangle and crimp the edges with a fork. Place on an oiled baking sheet and spray or brush with olive oil. Repeat with remaining triangles.
Bake for 8-10 minutes at 400 degrees then flip and bake for an additional 3-4 minutes to crisp. Serve immediately. Yum!
