In this class Chef coco marries her two favorite cuisines, Cajun and Italian. New Orleans has deep roots in Italian food and culture and the influence produces delicious dishes! Learn about combining the two cuisines and collect delicious recipes for your next gathering. The class begins with a lesson on making the tasty Arancini, a traditional Italian appetizer but with crawfish and Cajun spices to make it a local delight. Served with a zesty Remoulade Sauce. We will then move on to a Creole Eggplant Polenta Parmesan made with Polenta’s second cousin, grits. This time-honored classic dish gets an unexpected flavor enhancer with the Italian Creole ingredients. Chef Coco will then share the secret to her favorite Pastalaya, a staple in the Cajitalia menu lineup. The evening will end with a twist on a Biscotti featuring figs and pecans in a crunchy cookie base, just in time for holiday gift giving.
